These absolutely adorable gingerbread men cookies would be such a fun recipe to make with little ones. I know when I was a kid I loved making Cutout Cookies with my mom at Christmas and getting to decorate them! Plus, they’re healthier than your average cookie since they’re only sweetened with coconut sugar, and use healthier flours like buckwheat and oat.

GINGERBREAD MEN COOKIES
Nothing says Christmas quite like gingerbread men cookies. It’s so much fun to get the family (or in my case my boyfriend) involved when drawing the faces. Plus, I always think that the festive spices smell soooo good as they’re baking! Honestly, my mouth is watering just thinking about them and I might have to go and make another batch after I finish writing this post!
Gingerbread men cookies are my favourite festive treat. I always make them fairly small, so I can snack on them multiple times in one day!
This recipe uses buckwheat flour, which is naturally gluten free. In place of refined sugar this recipe uses coconut sugar, although you could also use soft brown sugar if you wanted. The biscuits have a slightly nutty taste thanks to the almond butter and are gently spiced, but you can add in more if you love a fiery kick to your gingerbread men. If you love nutty biscuits then you could also make a version of these gingerbread men with chestnut flour.
These gingerbread men would make a lovely Christmas gift, along with some homemade gingerbread peanut butter cups or easy homemade vegan chocolates.

Ingredients
- 1 1/4 cups buckwheat flour
- 1 cup gluten free oat flour*
- 1/3 - 1/2 cup coconut sugar
- 3 tbsp. coconut oil (melted)
- 3 tbsp. smooth 100% almond butter
- 1 tsp gluten-free baking powder
- 2 tsp ground ginger
- 1/2 tsp ground cinnamon
- Sprinkle of nutmeg
- pinch of salt and ground white pepper
- cacao nibs to decorate
Instructions
- Sieve your buckwheat and oat flour. Mix in the baking powder and spices.
- Add in the coconut oil and almond butter and mix until it forms a dough.
- Roll the dough into a ball and wrap in cling film. Place it in the fridge for at least 30 minutes.
- Once the dough has chilled, preheat the oven to 180°C / 350°F.
- Roll the dough between two sheets of baking parchment until it is 1cm thick.
- Cut out the gingerbread man shapes and carefully lay them on a baking tray.
- Roll the dough back into a ball and repeat steps 6-7 until all of the dough has been used.
- Use a knife to carefully draw a face on each little gingerbread man and press cacao nibs into the body as buttons.
- Cook for 12-15 minutes.
- Wait for the gingerbread men to cool and then store in an air tight container for up to 7 days (if they last that long).
Notes
*You can make oat flour by blending oats in a food processor.
