I know it’s been awhile since my last post, but it’s for good reason. (Promise!)
I took a two month cross-country trip from South Carolina to Seattle, Washington – and back. Yup, by myself. There were multiple reasons for the trip, but since I moved back from Europe I’ve been living the life of a free spirited nomad (part by choice and part by necessity), essentially staying with different family members, friends and traveling while I decide where I want to move next.
On this cross country trip, I got to visit with some of my best friends along the way in various places, some of whom I hadn’t seen in years! Plus, I got to meet some of my extended family in Portland who I met when I was an infant – which really doesn’t count – so it was more like meeting them for the first time. I feel so grateful that I had the opportunity to take this journey, as it truly feels like it was a once-in-a-lifetime opportunity!

Okay, so as you’ve probably seen around here, it’s not just me (Sarah N) anymore. There are some posts from my new friend – Sara K! (Yes, we really have the same name – makes it easy for you!)
What’s going on?!
A couple months ago, I decided that it’d be best for Vegan Chickpea, and for me personally, to get some support. Vegan food blogging has been an amazing experience, but my heart is being called in some other directions, and I have a lot going on in my life (health challenges, being a nomad and other things) that ultimately made me decide that I wanted a new team to hop on board Vegan Chickpea.
At this time I’m still contributing posts but am eventually phasing out. Don’t worry – I’ve actually met (most of) the new team in person when I was in Portland during my trip, and they are *so awesome*! Here we are hanging out:
That’s me and (the new) Sara, and then me with her husband Ryan. They’ll be running Vegan Chickpea now, along with another friend of theirs. I’m so grateful that they came into my life – I couldn’t have asked for a better team to invest in Vegan Chickpea! Let’s give them all a warm welcome!
4 Ingredient, One Broccoli & Cauliflower Rice Skillet
Alright, time to finally get into this recipe. I love this post because I know so many of you are busy and wonder what to make when you just don’t have time, or when you’re traveling, or when you really want to eat healthy but can’t be bothered to cook.
Well – I have just the thing, and it’s literally only FOUR ingredients! (Five if you get fancy with adding some pumpkin seeds). I literally made this on my trip and couldn’t believe how good and simple it was (and healthy to boot)!

Here we go:
- Frozen Organic Broccoli
- Frozen Organic Cauliflower Rice
- Heidi Ho’s Organic Creamy Chia Cheeze (or other vegan cheese of your choice!)
- Hemp Seeds
- Bonus: Pumpkin seeds for extra protein + crunch!
Seriously, all you do is heat up the frozen veggies in a pan, then when they’re cooked, stir in the cheese (I love Heidi Ho because it’s organic and made out of REAL food like veggies, potatoes, cashews and seasonings). Add salt and pepper as needed, then sprinkle with hemp and pumpkin seeds on top. DONE!

It’s not only the easiest recipe of ALL TIME (a 10 year old could make this), it’s also healthy, tasty and full of protein.
I like to keep frozen veggies like this in my freezer so when I run out of fresh produce but don’t feel like leaving the house (which is like, pretty much every day), then I have some back up healthy food to eat.

Ingredients
- 12 oz bag frozen cauliflower rice (about 3 cups)
- 16 oz bag frozen broccoli (about 4 cups)
- 1 1/4 cup vegan creamy cheese - I recommend Heidi Ho brand's Organic Creamy Chia Cheeze (I used the whole container)
- Sprinkle of hemp seeds and/or chia seeds on top*
- salt + pepper to taste
Instructions
- Heat a cast iron skillet (or non stick pan) over medium heat.
- Add the frozen cauliflower rice and broccoli. If needed, add a little water - no more than 1/4 cup.
- Stir occasionally as the veggies cook. Once cooked through, stir in the cheese and let cook until warm and lightly simmering, about 2 minutes.
- Remove from heat and add hemp and/or pumpkin seeds on top. Add salt + pepper to taste.
Notes
*This is about 1/2 cup total, but you can add way more or way less depending on your preference!
